We have included a tasty warming soup recipe for you to try.

No-fuss Lentil Soup

Preparation: 10 minutes
Cooking: 45 minutes
Serves 4

2 tbsp/30ml olive oil

1 medium onion, chopped

2 medium carrots, chopped

3 sticks celery, chopped

1 clove garlic, chopped or grated

4 cardamom pods, split but with seeds left in

125g/1 cup lentils

600ml/2 ½ cups organic vegetable stock

Freshly ground black pepper

Fresh parsley to garnish

 

Heat the oil in a large pan, add the vegetables (these or any you like best) and garlic and fry until softened. Add the remaining ingredients.  Bring to the boil, cover and simmer for 45 minutes, stirring occasionally. Check the seasoning and serve sprinkled with parsley.
